Introducing: Indulge and Heal eBook

Some of you have probably followed the great blog EmpoweredSustenance.com written by Lauren, a spunky 19 year old who is way ahead of the game when it comes to health. I recently got to preview Lauren’s e-book Indulge and Heal and I was blown a away by the beautiful pictures and the decadent easy to follow recipes.

It is a sad state of affairs where food makes children ill in their teens or even younger.I was intrigued Lauren’s story of having digestive illness at a young age and her dedication to finding her own path to rejuvenation. The great part is that she did her own research and found ways to heal herself with traditional foods and therapeutic diets like GAPS/SCD or Paleo. She didn’t just take drugs to mask the symptoms, all the while just getting sicker and more inflamed.

Why should you Indulge and Heal ?

Many people who follow a grain free diet, such as the Specific Carbohydrate Diet (SCD), the Gut and Psychology Syndrome Diet (GAPS) or the Paleo/Primal diet, do so to heal their body. In many cases, removing polysaccharides from the diet (such as grains, most sweeteners and starchy vegetables) greatly reduces inflammation and can help repair a leaky gut.

Even though a grain free diet excludes processed and starch-based desserts, it can accommodate delicious treats made with nuts, seeds, coconut flour, fruit and honey from time to time. While allowable desserts are not a necessity on a grain free diet, they play an important role in the healing process.

Health does not rest on solely on perfect nutrition. It also means grateful, joyful and vibrant living.

Occasionally indulging in sweets made with nourishing, real food ingredients makes a grain free diet more satisfying and enjoyable. Additionally, it creates a mindful relationship with food which fosters optimal healing.

How Lauren used a grain free diet to heal her colitis:

Ever since my ulcerative colitis diagnosis six years ago, I constantly learn how diet, emotions, and lifestyle fit together as the key to healing chronic disease. For four years, I tried to use medication to manage my colitis, but the traumatic side effects nudged me to reevaluate my complacent attitude. After reading and researching the healing power of nutrition and mind-body medicine, I realized I could cure myself… but only with complete dedication and determination.

The turning point came in August 2011, my first semester at college. Although I struggled to mask my health issues, I could no longer hide the hair loss caused by my medication, my dwindling energy and my shrinking confidence.

At the end of the fall semester, I headed back home, ditched my medication, and threw myself wholeheartedly into treating my colitis with nutrition, holistic living, and mind-body medicine.

The most important change was starting a combination of the Specific Carbohydrate Diet (SCD) and the Gut and Psychology Syndrome Diet (GAPS). These grain free diets eliminated my debilitating colitis symptoms in a few weeks! I love learning new ways to restore and heal our bodies, and I have a blast sharing recipes and resources on Empowered Sustenance. Remember, eat well and heal!

I asked Lauren which recipe was her favorite:

“Personally, I think this book could only contain the recipe for Vanilla Meringue Butter Cream and still be worth the entire price tag. Tired of sad excuses for sugar free frosting? This honey sweetened dream is pillowy, billowy and GORGEOUS. Not to mention friggin delicious.”

“Of course, I’m partial to all the recipes in the book. Some favorites at my house are the Spiced Carrot Bars, Grapefruit Curd and the Banana Mango Sorbet.”

FAQs

When making a chocolate mousse Why does melted chocolate need to be warm when the whipped eggs or cream are added? ›

The melted chocolate should not be hot because the eggs will curdle when added. Nor should it be cold because the eggs won't incorporate smoothly. Make sure the melted chocolate is at body temperature.

Why is chocolate mousse so good? ›

Chocolate mousse is a staple among chocolate desserts. It is very popular for all ages. Its texture is easy to recognize as it has a light, airy look, its chocolate flavor is intense and it's soft and melting on the palate. This dessert is a real treat and a light and simple finale to any meal.

How do you serve choc mousse? ›

While chocolate mousse is just fine all on its own, you can fancy it up by adding a dollop of whipped cream to each dish before serving. You can also layer the mousse with raspberries and whipped cream; if you do this, serve it in glasses so you can see the pretty layers when you serve.

How old is chocolate mousse? ›

This one was a singular success. It's thought the first documented recipe for chocolate mousse was by Menon, in 1750, appearing in the book La Science du Maître d'Hôtel Confiseur for pastry chefs but chocolate mousse didn't start becoming popular in France until the late 1800s.

Why isn't my chocolate mousse fluffy? ›

Make sure to use room temperature eggs for your mousse. The egg whites will whip much more easily, and the egg yolks won't seize your chocolate when you add them to the chocolate if they are room temperature. Add the five egg yolks one at a time to the melted chocolate.

What is the thickening agent for mousse? ›

The thickener:

Traditionally, mousse is made with gelatin. The gelatin should be bloomed in cool water or 5 minutes, then melted before adding to the base. The amount of gelatin can be altered depending on the desired texture.

What's the difference between chocolate pudding and chocolate mousse? ›

Pudding is meant to be thick, soft, and silky, and is, therefore, a lot less airy than mousse. This difference in texture lies in preparation. Pudding requires heat to come together with the right consistency, whereas mousse simply needs to be whipped together.

Do you freeze or refrigerate chocolate mousse? ›

Freeze for up to 2 months. As the mousse contains gelatine and some sugar it will not freeze completely solid. Thaw the mousses overnight in the fridge and consume within 24 hours. You may also be able to serve the mousse almost frozen, as an iced chocolate mousse.

Why is my chocolate mousse runny? ›

A runny mousse that won't set is caused by the opposite of the reason for grainy mousse. If your mousse won't set, it is most likely because you have under-whipped the heavy cream. Perfectly whipped cream will stabilize the mousse as it sets in the refrigerator.

Can you eat out of date chocolate mousse? ›

Food that has passed its use-by date is not safe to eat.

What happens if you add cream to melted chocolate? ›

What kind of chocolate do you end up with if you use half and half or heavy cream instead of milk? Ganache. Melt dark chocolate into heavy cream and it makes a smooth, pourable glaze. Or whip it and turn it into a frosting.

Why is my chocolate mousse so runny? ›

A runny mousse that won't set is caused by the opposite of the reason for grainy mousse. If your mousse won't set, it is most likely because you have under-whipped the heavy cream. Perfectly whipped cream will stabilize the mousse as it sets in the refrigerator.

Can you add eggs to melted chocolate? ›

The key to a successful chocolate mousse is making sure the egg yolks and whites are completely separate. Mix the yolks with the melted chocolate, and only add the whites in once they have been beaten. Tested and approved!

How do you melt chocolate and keep it creamy? ›

Just remember to be patient—take it low and slow to guarantee lusciously smooth melted chocolate! Simply microwave the chocolate in 30-second intervals at 50% power, stirring in between each interval until melted and smooth.
