Before whenever we’d visit our local Portuguese bakery, Ella would always go for the house-made donuts, but this summer she’s been all about their strawberry tarts – so of course, we had to develop our own Kid-made Strawberry Tart Recipe!

One of the kids’ favourite Montessori practical life lessons has always been hulling strawberries, and we have so many recipes that the kids can help make after they perfect hulling & slicing strawberries:

Yea, you could say we really like strawberry recipes… (There’s even more strawberry recipes than that, but the list was getting a little long!)

But on to these tarts… These are the perfect kid-made strawberry tarts, with a fail-proof pie crust and easy glaze. The buttery crust melts in your mouth without bing crumbly, while the strawberries remain crisp and juicy while covered in that perfectly-sweet glaze.

We made our own homemade pie crust for these tarts, but you could easily use a graham cracker crust or pre-made pie shells if you’d prefer a no-bake recipe.

However, we kind of cheated by using Jell-O to make the strawberry glaze. You can use our homemade strawberry syrup and add a bit of cornstarch & gelatin to thicken the glazeif you don’t want to use it.

How to Make Strawberry Tarts

First, gather your ingredients:

For the strawberry tart filling:

  • 1/4 cup cornstarch
  • 1 1/4 cups sugar
  • 1teaspoons salt
  • 1 1/2 cups water
  • 1 pkg Strawberry Jell-O
  • 3 cups strawberries

For the tart crusts:

  • 2 cups flour
  • 1 teaspoon salt
  • 1 Tablespoon sugar
  • 6 Tablespoons butter
  • 6 Tablespoons shortening
  • 6-8 Tablespoons water

I started making the glaze with Ella (now 5 years old) while the other kids cut up the strawberries. We all worked making the pie dough while the galze cooled down.

Combine the cornstarch, sugar, salt and water in a saucepan and bring to a boil over medium-high heat.

Remove from heat and stir in the strawberry Jell-O packet.

Allow to cool while you cut up the strawberries and make the pie or tart crusts.

I set out several strawberry tools for the kids to experiment with – hulls, knives, and slicers – along with their aprons and cutting boards. They each needed to cut up 2-3 strawberries per tart.

To make the pie crust, combine all ingredients until a crumbly dough forms.

Press about 3 Tablespoons of dough into each compartment of a greased muffin pan. (Even better if you have a tart pan!)

Bake at 350F for 8-12 minutes until lightly golden.

*This is a great time for a dance break to let the tarts cool – we went with Amy Winehouse’s Valery, but choose your own jams!*

Place the cut strawberries in a bowl and mix with the glaze – just enough to make a generous coat on the strawberries.

And then spoon your glazed strawberries into the cooled tart shells.

Eatand try to share with your helpers.
